My dad recently got a Wii for his house and guitar hero for it.

I have no game systems here (they are all at my other house), so I'm always bored here during the week. I plan to get a 360 pretty soon to fix that though. Would I be able to use my old Xbox games on the 360?

Yes indeed, the Xbox 360 is backward compatible. IOW, it plays Xbox games.

Mine is currently sitting immediately to the left of my Wii, all plugged in.
